I said easy, and here it is.
- About 500 gms chicken wings (Of course!)
- 2 tbsp honey
- 3 tbsp soy sauce
- 10 peppercorns coarsely crushed
- 1 tsp chili flakes
- 1 tbsp rice wine vinegar or cider vinegar
- 1 tbsp Worcestershire sauce
- 1 tsp tabasco
Season the chicken with salt. Heat 1 tsp oil in a pan, coat the pan evenly and roast the wings until brown. About 5 mins.
Whisk all the other ingredients together and set aside. Tumble the browned wings on a baking tray. Pour half the spicy mixture over it and bake in a 190 degrees pre-heated oven for about 15 minutes.
Put the baked wings back in the pan used for browning the wings. Scrape the sticky sauce off the baking tray. Pour some vinegar if it doesn’t come off easy. Pour the remaining mix over the wings and let it reduce until the wings are well coated, sticky and have an inviting glaze.
Dig in. Resist the temptation of taking a bite right away. I burned my tongue, but hey, it’s well worth the pain!
