Wholewheat Ginger Cookies

I have been feeling really low this whole week. Fever, cold and a bad throat makes me crave for all things warm and gingery. Nothing better than fresh ginger cookies to go with my spicy healing tea.

  • 1 cup whole wheat flour (about 120 gms)
  • 1/2 cup butter
  • 1/2 cup brown sugar
  • 1/4 cup white sugar
  • pinch of salt
  • 1 1/2 tsp ginger powder
  • 1 tsp cinnamon powder
  • 1/2 tsp clove powder or 4 cloves roughly powdered
  • 1 tsp baking powder

Mix all the dry ingredients in one bowl and start creaming the butter and sugar in another. Once it’s finely mixed, break an egg into it.

Don’t bother to let the sugar melt. A bit of sugar crystals won’t hurt anyone. Beat well with the egg in till the mixture is nice and fluffy. Then add the dry ingredients and mix well to form cookie dough.

If the dough is runny add a bit more wheat flour. Then make small balls and flatten them onto a baking tray. Then preheat oven to 180 degrees and bake for about 10 minutes.

Transfer cookies to a wire rack for cooling. Enjoy with a steaming hot cup of tea.
