Whole wheat chocolate chip muffins

As I keep adding posts here, you’ll realise that I am extremely nutrition and calorie conscious and refrain from using more than 1tbsp of oil per person in any dish. But what would you do when you are like this and still the late evening sinful chocolate cravings still don’t escape you? My answer: substitute 1/2 the quantity of maida with whole wheat flour and use as little shortening as you possibly can.

I used:

  • 1 cup* maida
  • 1 cup whole wheat flour
  • 1 1/2 cups milk
  • 3 tbsp butter
  • 2/3 cup sugar
  • 1/2 cup chocolate chips
  • 4 tbsp dark cocoa
  • 1 1/2 tsp baking powder
  • 2 eggs
  • 1 tsp salt
  • 1 tsp vanilla essence

Method:

In a bowl mix the flour, salt, cocoa and baking powder. In another bowl mix melted butter and beat the eggs in. add milk and vanilla essence and mix together. and this to the flour. Add the chocolate chips and mix together lightly. Don’t bother to smooth the lumps. Pour in a lined muffin tray and bake for 25 minutes in a 180 degrees C preheated oven.

* I use small cups for measurement. This gives me 10 small muffins. If you have the patience to measure everything, that’s even better.
